My uncle used to own a SHITLOAD of arcade games in the late 80s/early 90s and he would lease them to restaurants and stores. Anything that didn't get leased or was being repaired was at his house in a garage like 2-3 times your normal 2 car garage nowadays....packed to the brim with arcade cabinets. I'm talking about having to climb over games just to get to other games. Free play all day.
Anyway, here are the ones that take me right back when I play them at the arcade today:
Outrun (stand-up version)
Track & Field
Shinobi
Galaga
Double Dragon
Tron

Ms. Pac Man: The versions with the "Blue Maze" glitch on the first board were always my favorite.

Cool game until you get to the last phase. You know, the one where they're poking spears at you and sections of the wall are popping out. Totally takes away from spirit of the game. Just a cheap gimmick to get you to lose more energy before you get to the final showdown against the machine gun guy.

As a soon to be greybeard who was in grade school just as Arcade games burst on the scene, the ones I loved spending my paper route money on were
Asteroids. (http://www.youtube.com/watch?v=OSLZmtwJHJw) For me, this was the best first generation game. Much better than Space Invaders and Pac Man. I still remember playing this to the point, that when I went to sleep at night, I would see Asteroids behind my eyelids.
Joust (http://www.youtube.com/watch?v=7BNBQxMnvzs) A forgotten classic. Hard to master. You killed the enemies by flying higher than them, but if you flew too high, you bounced off the top of screen and they would kill you. If you stopped tapping the button to fly, you fell with what seemed like real momentum and it was hard to go from a free fall back to flying. The key was to stay no too high and then quickly go high for the kill. There's a bar near me that has this.
Qix (http://www.youtube.com/watch?v=zZt64cECO5g) Super simple graphics, really challenging game play. You had to wall off a majority of the screen without crossing the line you created or getting hit by the Qix, which was just a group of lines that changed shape and position unpredictably.
So what dates me more? The fact I played Asteroids or the fact that I had a paper route?

NBA Jam
Mortal Combat

Virtua Fighter
Pit Fighter
There were so many weird ones over the years.
When I was a kid I'd spend a couple weeks every summer on Hampton Beach in Vermont which had a great boardwalk littered with arcades. And we had one near where I grew up, the Milford Rec, which was home to more than a few birthday parties over the years. The Milford Rec is still open, but these days it's mostly a laser tag gallery. I have little cousins who don't even comprehend the concept of an arcade.

1. Pop-a-Shot
2. Air Hockey/Bubble Hockey
3. NBA Jam/NBA Jam: Tournament Edition
4. Teenage Mutant Ninja Turtles: Turtles in Time
5. The Simpsons
6. Tetris/Lethal Enforcers/Daytona USA
There was a time where the most exciting part about going to Cedar Point was not going on the roller coasters, but playing NBA Jam: Tournament Edition. It was like that. It always seemed like the game's audio was turned up to 11, which in turn made things feel extremely intense. And I always thought it was funny that players would be shoving each other to the floor, setting nets on fire, etc. and it was all more or less overlooked. However, god forbid you goaltend a shot, because at that point the arcade game itself would go into partial meltdown, with the screen flashing red, loud horn blaring, and announcer yelling, "GOALTENDING!?"
I can't leave a place unless I own the machine record on one of the hoops. Luckily Super Shot is fairly cheap.
I'm the same exact way. Someday, if our arcade paths ever cross, there's going to be a problem.
A few years ago my little brothers saved up $70 or so and bought a ghetto Pop-a-Shot off the internet. It was at that point I was able to refine my strategy and technique. For me, to be successful at Pop-a-Shot almost requires forgetting everything I know about how to shoot a basketball. Still a tremendous amount of fun though. There's a giant basement arcade in downtown Ann Arbor I frequent every now and again with my brothers or a date, and Pop-a-Shot is always a can't miss stop. That and Tetris.

Also, some interesting facts about NBA Jam (via interview with Jam creator Mark Turmell):
Who was your favorite two-man team?
The most interesting one was the team of Gary Payton and Michael Jordan. Payton didn't make the cut to be in the game, and of course, Jordan pulled himself out of the licensing of the NBA, so we had to pull him out of the game. But one day, I got a phone call from a distributor out on the west coast who told me that Gary Payton was willing to pay whatever it cost to get into the game. So we told him what to do in terms of taking photographs, so he sent in photographs of himself and Jordan, saying, "We want to be in the game, hook us up." So we actually did a special version of the game and gave both players all-star, superstar stats. There are only a handful of these machines, but Jordan and Payton did end up being in one version of the game.
Shaq actually bought two machines. He kept one at home and then, if you can believe this, they shipped the game with them on their road trips, setting up the machine in their hotel rooms as they traveled. The players would play, then get someone to pack it up and ship it off to the next city.
Did Scottie Pippen's ratings in the game really drop when he played certain teams?
It's true, but only when the Bulls played the Pistons. If there was a close game and anyone on the Bulls took a last second shot, we wrote special code in the game so that they would average out to be bricks. There was the big competition back in the day between the Pistons and the Bulls, and since I was always a big Pistons fan, that was my opportunity to level the playing field.
What's the rumor we hear about NBA Jam being haunted?
We had already finished making NBA Jam when Drazen Petrovic died. The game had already shipped and he was on the Nets. So we had all of these coin-op machines around, and one night we were playing Mortal Kombat and there was a Jam machine next to it, and all of a sudden the game started calling out "Petrovic!" "Petrovic!" And this only happened after Petrovic had died. Everyone started freaking out. Something weird was going on with the software, and to this day, if you have an original NBA Jam machine every once in a while it will just yell out "Petrovic!" It's wild.
