Medium rare. I usually let the steak out for a bit out of the fridge. Put some olive oil, salt and pepper on each side while the grill is heating up. Couple minutes each side and I'm good.

It depends. If the meat is fresh from the market, I would let it sit out in room temperature first and cook it medium rare.

If the meat has been sitting in my fridge for a couple of days then I would go with Medium Well to Well Done. I go with well done if the cut of meat is too chewy and medium rare if it's a good cut that melts in your mouth.

Sometimes a Well Done steak is fantastic and sometimes Medium Rare is great depending on cuts.
