So... YouTube is pretty much a wasteland of sh!tty covers that get in the way of every search of any even semi-well known song in the world.
I know you have to start somewhere and I applaud people for having the guts to record themselves trying, even when they know they can't nail the tune... But, the sheer abundance of sh!t makes it annoying.
With that said, you will occasionally stumble across a really cool cover or version of a great song by some random person out in the interwebs. Sometimes, their versions can even challenge the original concept of the songs.
I find that usually the coolest homemade stuff is done acoustically, just simply because it gets a fuller sound when playing alone, and most of the YT cover attempts are done by just one or maybe two people, not an entire band.
Anyways, here are some of my favorites... I'll start with a Floyd acoustic cover that doesn't just have a tremendous (and quite different) sound, but interesting visuals as well.

Very nice. I'm not familiar with the original song, but well done none the less.
Sticking with the Pink Floyd theme, here's a little more obscure tune, but one of my favorites. One guy plays five instruments and really just nails it.

there are absolutely some monster talents on youtube, in every area. The sad thing is the people getting subs and views are 14 year old girls doing whatever.
I can spend hours searching youtube and it's rare that I don't find some shit that is mind blowing.
It makes you wonder how they got stuck doing shit on youtube... or if they just don't give a ****.
Edit: O, I'm talkin about dudes who are just on a shitty webcam with their guitar or whatever.

I don't know if you're specifically looking for those talking heads confessional style covers or what but this is one of the best covers I've seen on the web, I'm a huge Otis guy so I'm soft for the song but also critical of cover...ers

This is why I love YT. The drummer has a tough task trying to replicate Danny Carey, which is damn difficult for even the best guys. He does a passable job, certainly, and he nails it at certain points. I enjoyed the vocals quite a bit.
