I originally wanted to just recommend a few but it's better if everyone chipped in and recommended some good ones. Right now I'd say everybody should watch Adam Curtis' Power of Nightmares, it's not the whole story but it's the best attempt at exploring the roots of today's Islamist extremism. I watch a lot of those 30 for 30 documentaries by ESPN.

I can't stand political/ideological documentaries because anyone can twist things with their own agenda, and obviously they do.

I enjoy documentaries that are either about art/design, about random peoples lives, or 30 for 30 type sports docs with maybe some crime documentaries mixed in. I'm not big into political/religious documentaries because I can just read better stuff about those subjects.
