I can finish up my degree a term early. I only have one fairly difficult class left and loads of electives.

For my minor, I have two classes left and one is notoriously hard and isn't offered in the terms I can graduate early in.

Should I just finish the degree only? I've heard horror stories on how much time and how strict the grading is for that "notoriously hard" class.

It depends on what your minor is.

minors are pointless. don't waste your money. If you need to bump up your cumulative GPA or maybe you just wanna hang out for another semester then do it.

this. Most minors are pointless, if you have a minor in computer science it may be a different story.

Yes minors are pointless strategically, but you can do it if you enjoy school and like the classes.

As I remember it I was one class short of a minor in history. Isn't worth anything but I enjoyed history classes.

Agree completely. I was in the same boat as OP (all major classes completed; 2 courses short of my business minor); and my academic advisor basically gave me this exact speech. He then pitched the idea of combining some of the Sociolology courses I had taken with my Business courses into a multi-disciplinary studies minor (business in society or some BS); and after I gave him a 2 paragraph blurp of bullshit I was told to get ready to graduate.

the only advantage of having a minor is to brag about the passion that you had for that subject for 20 seconds during your job interview, but most likely, the interviewer won't give a shit unless he also minored in that irrelevant subject.

They're irrelevant professionally. It takes 10 seconds in an interview to tell them "I also speak Spanish", "I can program in C+", etc.
