My first (racist?) thought was, "another weird idea from Japan." But thinking about it further I guess it's like any other use of food coloring. Which is to say, useless eye candy for people overly concerned with the aesthetics of their food. Mint jelly doesn't need to be green, Froot Loops and Trix are also colored for no culinary reason, red 40 has no nutritional value, and we could go on.
