Is it more correct to say:

"I'm just here so I don't get fined."

or

"I'm just here so I won't get fined."

The first one.

"Won't" is more reserved for "It won't happen" since you can't say "It don't happen".

both forms are correct i think. Don't means hes not gonna get fined right away. Won't means he will not get fined in the future for his actions

I think it would be an appropriate explanation for his protest. He's not there because he knows he won't get fined, he's there so he doesn't get fined.

Marshawn is using a "So that" conjunction to talk about his purpose and intended effect, that is usually omitted when speaking. Better forms of expression:
I'm just here so that the NFL doesn't punish/fine me.
I'm just here to avoid fines/suspension/punishment.

With that said, between the two forms in the OP, both forms are correct you can use either "won't" or "doesn't".
