You do realize water that evaporates does not disappear forever. It just becomes vapor which reaches the atmosphere then it condenses and will eventually become water again when it rains.
Cmon man, this is simple chemistry

Exactly. The asteroid would just make the earth wobble around like a quarter dropped on a table and we'd be fine after a few minutes.

At the end of the video they go over what they think would happen after the collision. The water vapor would stay in the Earth's atmosphere and most of it would remain and not go out into space because of gravity. Most of it would get released in epic rainfall.
