Like when someone says
"I haven't seen you in years" or
"I've been working here for years"
What is the timeline where "years" is applicable?

When someone says "years", it's deliberately ambiguous. Usually to fool the listener or to give an approximate timeframe or simply forgetting the exact number. Therefore it's applicable in anything over a year.

the "s" implies more than 1. It does not imply a specific number.
Years, apples, tires, candles, retards etc =mote than one, but not a specific number
