I am thinking of coming there for a holiday(from Australia) because I want to see the rockies and Mt Evans. Also want to go to Aspen and travel the I-70. Whats good in Denver city and the best hotels?

Go to Durango
Yep that's one area I am certain to go. First I am going back home to Houston to see some family and then will go to Colorado. I've already put together a list. Colorado springs, Aspen, the national Rockies park, Durango and few other spots. My wife is an Aussie and she has rarely witnessed such amazing scenery so it should be interesting.

With all due respect to Colorado, if the point of your trip is to show your wife amazing scenery, go to Utah, not Colorado.

Southern Utah, not far from the places you are talking about, has killer national parks in the form of Arches, Canyonlands, Bryce, Zion, Capitol Reef, and Monument Valley. If your wife likes the scenery of the Australian outback, she'll go nuts over a place like Bryce:

If Rocky Mountain scenery is what you want, it makes a hell of a lot more sense to fly into Salt Lake and be in Park City in 45 minutes than it does to fly into Denver and take 4 hours getting to Aspen. SLC kills Denver when it comes to proximity to the mountains:

Denver is a great city, but if the point of your trip is scenery, go to the southern Utah national parks and spend a few days in SLC/Park City.

If you want nightlife, bars, restaurants, social scene, that type of fun, go to Denver.

BTW, Colorado Springs sucks donkey balls.

I agree if you want to see the mountains don't go to Denver. Go to Durango then travel into Pagosa Springs down to Creede/Lake City, CO. You will see the San Juan's in all their splendor in a day's drive. We backpacked for a week this summer in the San Juan's starting in Lake City and it was amazing. We've also backpacked through the La Garita's right by Durango and done portions of the Colorado trail. Denver is the weakest part of Colorado if you want to experience the mountains.
