I read a while back (maybe on here) that it was being delayed until next year because there wasnt enough content out yet. and that the creators wanted season 2 to keep true to the manga, rather than stuffing it with filler episodes that dont adhere to the overall story

nah that's not true. there's more than enough for a second season. there's enough for them to be working on a season 3
