I need to add some diversity to my dishes. I want some spanish food. I've had pork once at a friends house and it was amazing. I've heard about pernil. I'm really getting into pork lately (chipotle pork)

Pernil which is slow roasted pork shoulder is quite good.

Arroz con Pollo is delicious too.

Also you seem to be talking Caribbian Spanish and not Mexican or South American Spanish.
