Anything grilled if you don't undercook it or overcook it is easy because you are just seasoning meat. Chicken breasts, burgers, steak, porkchops. Most sides that go with grilled food are pretty easy, usually vegetables.
Spaghetti like you said.
Food you make in the crock pot. Roast beef is great. Even though I use the stove to make homemade chili, other than cooking hamburger you just dump all the ingredients together.
Better include fish. Even if it's just baking cheap fish like Tilapia with a little margarine/butter and salt.
I'm sure you can tell I'm not a chef lol and I'm not a great cook, but I like food so I try to find different things to make. I'll go as far as making homemade lasagn, but if you want easy just put a turkey in the oven. Leftover turkey is amazing. It becomes so tender the juicey from sitting in the broth it created and you can just pick pieces off it on the go for a quick bite.

Over the past few months, I've made achar gosht, chicken tikka, nihari, biryani. I liked how they all came out. I did require video chat help from my mom and my brothers wife through them :lol instapot is life

Homemade Mac & Cheese...
Ingredients
1 lb pasta - large elbows or penne preferred. regular elbows work but don't absorb as well.
4 lbs block cheddar cheese - mild, medium or sharp.. your preference, i typically use sharp
2 cups milk or half and half or heavy whipping cream - i use fat free milk, but it's good with any variant, probably whatever milk you're used to
1 egg (this isn't for taste, it's a binding agent for the milk and pasta)
Dash of salt and or pepper
Stick of butter
-Boil 1 lb of pasta & preheat oven to 350
-While pasta is boiling, mix 2 cups milk with 1 egg, beat egg & milk with a fork or whisk. Mixture should now look like milk with a yellow tinge. Add a dash of salt and or pepper to this mixture if that is your preference. I use mostly salt with a tiny, tiny amount of pepper.
-Also before pasta is done, cut up the 4 lbs of cheddar with a knife into rectangular pieces the length of the shorter end of the each block. They should probably be half a centimeter each in thickness or so. If you want to be a lazy piece of shit, just buy 4 lbs of shredded cheese instead. Personally I don't think it's as good but at the end of the day it's just melted cheese.
-Grease w/ stick of butter inside your oven safe baking dish sides and bottom (dish should be 2 qts to 2.5 qts in size)... no need to go crazy, this is for no reason other than the mac sticking to the dish less
-Once pasta is done, arrange some pieces of cheese on the bottom of the dish. No need to cover the bottom entirely. Don't go super heavy. Some part of the dish should still be visible for sure.
-Put a layer of pasta over that cheese until cheese isn't really visible.
-Now put a layer of cheese over the top of that layer of pasta that is much heavier than the previous layer of cheese. You definitely want your cheese layer to be heavier here than before but seeing a bit of pasta is ok.
-Another layer of pasta over that layer of cheese
-I believe this should be the top of your dish now, go very heavy on the cheese so that pasta is not visible. Overlap the cheese in parts. Just get it covered. If there is a bit of extra cheddar or pasta left over, that's no problem, but typically I use all of the pasta and have a bit of cheese left so I typically snack on the cheese as I'm prepping.
-Pour the mixture all over the top of the cheese. Mash everything down before pouring if it's going to run off the sides because of the cheese.
-Pop it in the middle rack of oven for roughly 45 minutes. Dish will boil on the top edges when it is done, generally speaking. Your cheese should be slightly browned and definitely not burnt all over. It should be golden brown, basically. You should also halfway pull the rack out, grab a large spoon or fork and insert it into the dish on the side and push the macaroni away from the dish to see if the mixture is really high up in the dish or if it's fairly low. If it's really high and looks like the pasta is drowning in milk still, then it needs to be in the oven. Try 5 more minutes. Some milk is definitely ok. You don't want it completely dried out.
-Pull it out and let it sit for 10 minutes.
Now personally I think it's better left over because basically every pasta dish is better leftover as the pasta has soaked up whatever you cooked it with more, but it's ****ing amazing right then and there also.

Stick it in the thickest part(it stays in the chicken while the chicken is still in the oven cooking), but you should flatten the breasts pretty evenly for optimal cooking.
The FDA recommends hitting 165 internally in chicken to pretty much guarantee you won't get sick. You can do slightly lower temps than that. You don't want to cook your chicken to 180 or some shit. Read up on it, I'm not a health professional. Killing the bacteria is dependent on time AND temperature... it's just that hitting 165 basically "instantly guarantees" that any bacteria is dead regardless of how long it endures that temp.

Homemade Mashed Potatoes (super easy)
Ingredients:
5 lb bag of russet potatoes (could use less if you want but I like to cook this shit in bulk)
Milk (or heavy whipping cream if you're a fatass)
Butter
Salt
Also going to need an electric mixer for this one...
-Peel potatoes. Cut them into chunks. Each potato should be like at least 8 chunks? Not sure. Anyways, this will make them cook WAY WAY faster. You don't need to get every piece of skin unless you want to. Some bits of skin make it better imo.
-Put chunks into large pot of water and bring to a boil. Boil until you can EASILY stick a fork into each chunk. If it takes work to put the fork into the potato, the potato isn't ready. Keep boiling.
-Drain the potatoes into a colander like you would pasta.
-Once potatoes are drained, put them back into the pot.
-Add half a stick of butter and maybe a teaspoon of salt.
-Add about half a cup of milk.
-Using an electric mixer, hit them up until they are almost smooth with no chunks. I like a few chunks but not too much. You can keep going until they're completely smooth but wouldn't recommend.
-As you are mixing them, feel free to taste test them. If you think they need more milk, add more milk. If you think they need more butter or salt, add more butter or salt. You can keep adding but you CAN'T take it back, so just go slow.

So I decided to make this shit today because me posting the recipe got me wanting it... here are a bunch of pics showing assembly/finished product. The top came out perfect but I slightly undercooked the mixture but it won't matter especially as a leftover. I forgot to take a picture of one step of layering but you get the idea. You can cover the top with foil if you want it less brown but part of this recipe's brilliance is the crust at the top, imo. Anyhow!

Funny you guys are talking about homemade mac-n-cheese, I made some bacon mac-n-cheese from my own recipe this weekend. Using the bacon drippings as the fat element for the roux is where it's at and make sure you use good cheddar cheese. I also use cavatappi for thicker, milk-based sauces; those ridges hold sauce like a mofo.
Also...big yes to brining. White meat chicken and turkey and leaner cuts of pork really do benefit tremendously from even a short brine.

No, you can't... because that's not how that works. You can get the basics, but even if you follow videos and recipes exactly how you read them or see them on youtube, in this case, there are still variables from kitchen to kitchen, ingredient to ingredient, tool to tool... there are also subconscious things that are done during the cooking process that may not be adequately explained.
You can cook SOME things that you want with the help of youtube... but some of those things still require perfecting them in your own time and ways and will come out like dog shit the first time you cook them, even if you follow the videos step for step.

That is true, but the same can be said of anything. Fact is, to be a great cook in the past you had to follow somebody or read tons of books. Youtube has made it way easier to get good at it. And that goes for a lot of things. I've fixed a ton of shit on my car with youtube.

This isn't exactly cooking... When I don't want to.cool I will buy a rotisserie chicken, jar of gravy, hawaiian sweet rolls and a pack of idahoan instant potatoes. I've come to the conclusion though hawaiian sweet rolls dipped in the potatoes are amazing and don't need anything else. Idahoan doesn't even use milk, just 2 cups of water to boil and stir in.
I defy you to try it and to not think it taste really good.
