I remember eating flank steak as a kid and telling my dad it was delicious and what type of meat it was. He told me it was a cheaper cut of steak the Mexicans like to eat. Well dad, not any more :lol

Btw is ranchera only big in Mexico'? Or very popular in all of latin America?

Yeah ranchera's price has been climbing up steadily over the last few years. I feel like asking my neighbor, from across the street and owns a meat market, about the high price. Aldi every now and then has it on sale for about $5/lb.

What Is Carne Asada?

While “Carne Asada’s” literal translation in English means “grilled meat”, the actual cut of beef that most people are referring to when they say “Carne Asada” is Ranchera (in Spanish) or Flap Steak. Flap Steak is a tender, fan-shaped cut of beef that comes from the short loin portion of the cow. Tresierras Carne Asada is a thinly sliced cut of flap steak, skillfully butterflied, and marinated (per your request) in our Famous Chimichuri Wet Rub.

That might be the correct name but everywhere I've seen it in the US it's called ranchera. You know the stuff they use in carne asada. Or used to use at least lol. It's so expensive a lot of Mexican food services are chopping up less expensive cuts of meat now.

If you’re ever in Pittsburgh, it will be well worth your time to visit Gaucho’s Argentinian Parilla. They have a great chimchurri and all of their meats are cooked over a wood fire.


I’d revisit Pittsburgh for that restaurant alone.

Arrachera for me is the shit, no other cut comes close IMO...of course it has to be marinated and cooked over mesquite.

Diving into pork a little. What do you think of chuletas ahumadas? My gf makes these. Absolutely delicious. Like eating a big juicy piece of bacon. Probably can't be too healthy for you but that saltiness combined with a cold beer. Gawtdamn..

I know I'd be the one to gripe about a piece of steak, but I've noticed with flank steak it's marbled with subcutaneous fat too often to be a favorite.

Is carne rachera served with ranchero sauce?

All the wing places have raised their prices because there's a wing shortage, no joke. BW3's, WingStop, etc

Most steaks have gone up in the last 10 years but ranchera/flap/skirt steak used to be always cheaper than ribeye, new york, and even tbone. It was like $3.99/4.99 a lb back then a decade ago. Now it's more expensive than all of them(choice grade) leading to my point of the topic. It's obviously because of the growing Hispanic population in the US. Quite amazing considering it was typically sliced up and thrown into tacos or burritos in the past :oldlol:

Kind of like lobster used to be considered a poor man's dinner and now it's an expensive delicacy served at the most expensive restaurants.

Yeah I can't do bottom feeder seafood stuff either except for shrimp that's fried or cocktail right off the pier

Maybe some swordfish or sushi at a decent restaurant a couple times a year max.

Fish is like one of those meats that tastes way better right out the ocean and unless it's out of lake erie the crap we get has been frozen days/shipped. The texture just isn't ripe anymore

I order some good meat offline every now and then that come delivered with it's own little dry ice mechanism. The flank and chunk just get thrown right in pot roast. Great for soup or chili
