Growing up... my elementary lunch menu that was printed ever week referred to it as a Toasted cheese sandwich.

I've called it that ever since then.

Grilled.

This is the first I’m hearing of “toasted.” Altho theyre both reasonable names.

They're two (slightly) different things. Grilled cheese sandwich is two slices of bread and a slice of cheese. You assemble it, then grill the whole thing in a frying pan. Butter, mayo, a slice of ham or some bacon can be added at your discretion.

A toasted cheese sandwich that a lunchroom would prepare is a lot less labor intensive, which it has to be if you need to make dozens or hundreds of them. Toast plain bread in a commercial conveyor toaster. When the toast comes out, slap two slices around a slice of American cheese and there's your sandwich.

I would call it a grilled cheese sandwich, with tomatoes.

The main thing it is is a grilled cheese sandwich. The tomatoes are the additional thing.
