Theres a reason why virtually every commercial kitchen in the country (except california apparently) has a gas range - gas is the best method of cooking on a stovetop... and the alternatives arent even close.

-What's the issue with electric or induction stove? You can still cook most foods in whichever type of stove. For certain few restaurants like Korean restaurants that truly require a flame, I don't see why there cannot be exemptions. LA should consider certain exemptions as long as ample proof can be provided that without gas stove, certain food would not be possible for that specific restaurant. Do it on restaurant by restaurant basis.

This would kill pretty much all Chinese restaurants, where its cuisine revolves around hot woks using high-power gas stoves. Electric stoves can never create proper wok hay, and even there are powerful electric stoves that can simulate the wok hay, the way of cooking will be different since you cannot lift or flip the wok without losing the high heat and traditionally-trained chefs will all have to adapt (a lot of them won't).

Gas stoves are pretty toxic. Breathing all that shit in when you cook and hot boxing your house with fumes is not good for you. Cooking in general is unhealthy that’s why you should eat food raw. Screw Covid you should be wearing a gas mask when you cook.

I use to think this way until the wife and I purchased a induction top (our house does not have direct gas lines but rather a tank that needs to be refilled annually -- so we went electric). The induction top not only keeps the entire home cooler in the summer months but also heats up cast iron blazing hot in seconds.
