I love the taste of those roasted jalapenos you get at the lunch wagons but why do they have to be so hot? I'm not talking about the canned ones in the vinegar. Those rarely are very hot for some reason. And some of the jalapenos are mild and delicious but most are crazy hot. You forget to wash your hands and touch your eyes or your balls when taking a pee, and you are in a world of hurt
You already have the serrano and habanero if you like heat, so why don't they make Chile pepper that's in between the jalapeno and bell pepper. That would be the perfect pepper to eat with Mexican food or to make poppers with

They do. It's called Ghost pepper. Give it a try.

the reason canned/jarred jalapenos arent hot is because they are pickled.
anyway raw jalapenos are weak in the grand scheme of heat, but if you jalapenos are too extreme maybe try poblanos, anaheims, or fresnos.

i love serranos bc they can be as mild as a jalapeno or you can get a wild one that is hot. anyways, peppers should be for flavor not for the weird hobby some americans have formed with eating spiciest pepper possible.
serranos are great. but for ultimate flavor...ancho/guajillo are the goat. it's what is used for base on pozole, birria, menudo, carne en chile colorado, beans, tthe list goes on.
easy breakfast that i would prefer anyday over a typical american breakfast...
swcrambled eggs mixed with chopped serranos, diced ttomatoes, and diced onion. add salt, maybe black pepper. super good and easy to make. if you need more protein, add diced ham.
