I might have to say Patrick Ewing even though they couldnt match up directly.

The 80's
Detroit/Dumars. The only team/player that had consistent success against him.
He didn't really have any.
Though you could say Wilkins, Dumars, Drexler, Starks and Miller.

Dumars and the Pistons in terms of them defending him well, and him being frustrated by them, his team losing to them.
Drexler in terms of being the 2nd best SG over Jordan's career. Also he was a stylish dunker.
Dominique in terms of scoring races and dunk contests.
Grant Hill/Penny/Kobe in terms of when he came back those guys being semi-Jordan like players who got next MJ type comparisons who proved being anywhere near worthy of them.
There was the Knicks (you've given Starks, Kblaze Ewing) but that was kind of a one way rivalry, even if the Knicks nearly scared them once.

Pistons. Once he got over them no one else even mattered.
I vote Dumars too.
My second and third choices would be gambling (like someone else said here) and father time.
The Monstars
I always like the Dominique Wilkins match up. Both guys were the top scorers in the league, were extremely good dunkers, and were the main guy on their teams. But it wasn't a one on one competition as much as battle to see who would be the better guy for their team and pull out the win.
