One rule I have never understood is the reason why fumbling in the endzone results in a turnover, especially if the ball goes out of bounds.. I can understand if the opposing team recovers the ball, but not if they don't recover the ball.

I agree, if the ball goes out of bounds in the endzone then possession should stay with the offense, but place the ball at the 20 yard line, right at the red zone. Feels dumb to penalize a team for fumbling a ball out of bounds, nobody recovered it.
