Doncic was the best player in Mavericks-Clippers series
I agree that Kawhi was great but Doncic was the best player on the court. Just like Lebron in 2015 Finals.
He reminds me Jordan before Pippen. Doing everything, had great stats in first round playoff series but not enough to beat much higher seed teams without a good team.

How can he do everything when he don't play any defense?

I'd say it was pretty even.
Kawhi is the more consistent, automatic scorer. Luka's scoring is more explosive but inconsistent. Luka is a better facilitator. Kawhi is a better defender.
Ultimately a very similar impact. Basically if you could combine them into one guy, you'd have Lebron James.

It primarily means Kawhi's teammates were far superior and didn't need him to fill up the stat sheet the way Luka was required to.

He is guarded by Kawhi and George. He is mostly doubled just he stepped the halfcourt.
However he had 35.7/10.3/7.9
It means:
he is
1st on points
1st on assists
17th on rebounds
in the 2021 playoffs.
Not only this series, we could also say best performance in all first round series in 2021 playoffs.

He stopped Doncic from getting 60. Also he didn't guard him on every single possession.

In game 7, 3 point shot stats:
Doncic: 5-11 (Mostly contested stepback threes)
Rest of team: 5-25 (Mostly open shots)
Can you explain that?
Doncic is mostly doubled, guarded by Kawhi. There is no way he finds some open threes.
But he made 5 of 11 attempts.
During this time, as a result of he is doubled, his teammates played 4 vs 3 all the game and found lots of open three point shots.
However, they could make only 5 of 25 shots.
Made threes are equal, but attempts are 14 higher. Also, mostly open shots.
Can you explain it?

Not even close. Kawhi was 4 or 5 times better defensively and 4 or 5 times better in the clutch. Also look at their win share per 48 going into game 7:
Kawhi - .294
Luka - .106
Luka doesn't play defense and he's too overly ball dominant, pretty much a white tall westbrook
