Those are a couple of good videos teaching and showing the hopstep. In the first video, he never pump fakes out of his hopsteps, so I definitely had to find a video that shows fakes out of them, because you will definitely need to utilize them... but also the second video does a good job explaining the concept. Hopsteps are what usually separate people who can score in the lane effectively from those who can't. A lot of people will go in the lane and jump off of one foot when trying to score... and not only is it really easier to block, you don't have the option of faking... So you have limited yourself to only one option, and if it's contested well enough, then you will probably be forced to throw up a prayer.
You probably travel because you take a step after you pick the ball up, then hop step. That is a travel. You have to take that hop step when you pick up your dribble. Here is an example:

How do you stop this move? Well... It's tough. Staying disciplined is one way. Don't jump until they jump, contest, and anticipate. Just do the best you can. If they don't bring the ball high, then strip them.
