I like a medium crust, but I actually do wish I would have made the crust a bit thinner by stretching it out more. Still was damn good though

Suggestion would be to change the type of flour you use. I had your problem before. Get high gluten bread flour, or Caputo 00 flour.

This is the recipe I used:

500g high gluten flour
~375g water
3g yeast
10g salt

Use weight for pizza dough instead of volume. Don't use cups to measure. Use warm water, mix 1 tbsp of sugar and the yeast in it. Let it sit for 10 mins til it gets foamy. Then grab a mixing bowl, pour the flour, 1 tbsp olive oil and mix it around. Then add the salt to the mixing bowl. Now, throw in the water/yeast/sugar into the bowl and mix it. Shape it into a dough, knead it a little bit. Then put saran wrap over the mixing bowl and let it sit on the counter for two hours. Then, knead it some more, break the dough into a couple pieces. look up a video on kneading/shaping the dough.
