Are you serious? Your logic doesn't matter. You're laughing like you're not being a complete stan right now.
What does choke even mean? What does it matter what happened if LeBron had a shit series, regardless? He could have seriously been alone and shooting by himself in that series and it would make no damn difference to the end result. He had a shit Finals and it's counted towards his legacy. You can't simply overlook it because it suits your agenda.

Or maybe because if the plays an Eastern team in the playoffs, it's always the best and toughest Eastern team, while if he plays a Western team in the playoffs, it can be any team 1-8.

Yeah because those defenses were as good as the ones Kobe faced...
The 07 Spurs were a similar type of elite defense that Kobe usually faced in the Finals. Lebron averaged 22 ppg on 35.6% with 5.75 t/o vs them. So there are no 40% struggles, more like 35% struggles.
