Usually I go for medium when I am at a restaurant. When I get to pick my own steak from the store and make it at home, I almost always cook it rare.

That looks a little bit too raw for me IMO. Could get a little bit more oven time.

This makes me happy to hear. I'm not a steak snob or a chef, but I still hate to see a good cut ruined. I remember going out with a group and we were all ordering filets, and the server is asking everyone how they want it cooked, and this dude (whom I really didn't know) says "well-done" and my friend and I just dropped our jaw. After words we were like, 'dude, your destroying a fine cut of steak - might as well eat wood.' Whats even more funny, he asked for sauce too. LOL if it was prepared properly, sauce wouldn't be necessary!

Me, I like my steak medium rare. I go that way at a restaurant because if it a little more rare, I'm good, if its a little more medium, then I deal with it.

Oven? lol

The only time you don't use the BBQ, is when you're pan frying tenderloin.

in the resteraunt i work in the chefs chargrill the steak on the outside then season it and put in a pan in the oven, which is on quite high probably about 240 C, then can tell by touch when its ready then lets it rest for a minute, then serves it

if when you rest a steak the blood rises to the top, its cooked perfect medium

no doubt. They may also use the microwave to make your well done steak come out in a timely fashion with the rest of the meal. Well-done is never an option, even for ground beef imo.

As for how I like my steak cooked, generally by a little Filipino. Really, it depends what cut it is and what I aim to do with it. I nice fillet I want mid-rare generally. As others have said, I dont mind if it comes out closer to med as long as its still juicy. If most places cooked medium correctly, it would be fine (still some pink). gotta love the pink.

Yeah, problem is if you like medium you can't risk making that order. Cook could get distracted, or more than likely it sits under the heat lamp waiting for the rest of the meal or just for the server to come pick it up and before you know it you've got a M-Well steak; yuck!
