Think the director went to the gym with him one morning and it came up in conversation and he agreed to come along and film with them. Pretty sure that's what kobe said when asked about it in some interview

Robert Rodriguez was working out in the same gym as Willis and Willis asked him what he had planned for the rest of the day. Rodriguez told him and Willis wanted to tag along. The rest is history...
