I just rewound the Tivo. What Kobe said was that it would be easy to go out and score 50 points, lose the game and then say he had done his part. That would be the easy way to handle things. He did not say it was easy to score 50 points.

He can answer the question (that he can score on anyone when he's on) without saying that "it would be easy to score 50." That's just BS.

It is not arrogant to interpret someone's words in the absence of context. It may be premature (as it perhaps was here), but it's not arrogant. In fact, you can look up the word "arrogant" in the dictionary if you're unsure about this. ;)
Fact is, Kobe has made similar remarks in the past, so it's not a huge stretch to imagine that he said so again. In fact, I'm pretty sure he said some variant of "I can score 50 whenever I want" last season, perhaps during the playoffs. There was a thread here about it.

loki, SAS told him that he though he would go off in game 7 last yr and told him that most ppl were criticizing him saying MJ, malone, etc. would have gone down firiing. Then SAS told him he though hed get 50 because kobe was pretty hot that day...Kobe's response was that he had 20 at halftime and could have poured in 50 and just lost and said "i did my part" but he was more concernced on getting everyone goin cuz thats how they beat the suns earlier
