I made a black bean veggie burger the other day that was surprisingly quite good.
1 or 2 cans black beans, rinsed and drained
1/2 cup red onion, diced
1 jalapeņo pepper, seeded and diced
1/2 cup (or thereabouts) bread crumbs
seasoning (I used salt, pepper, cumin and some tabasco)
Mash the beans with a fork and mix in the other ingredients. Form into patties and cook on the grill or in a pan.
I served them with sliced avocado and a chipotle aioli (took some chipotle peppers in adobo sauce and pureed in a food processor with some mayo).
