From experience, salmon burgers tend to taste nasty. Granted my old college cafeteria used to offer this vile crap.

Yesterday my girl and I went to this food market and there was a game stall where I got a bowl of bison goulash and wild boar sausage. The bison tasted fantastic, I got pretty damn lucky though, as I said earlier in this thread, bison are heavily protected.

Bison for sure. Some restaurants here in NYC has it, I'd say for taste that sounds more appealing but for rarity go croc

In a burger, croc meat isn't that good.

Bison burgers are really good though. Had one in a place called Basement Burger Bar in Michigan. One of the best burgers I've ever had.
